The mead was fermented in 2023 with honey from that year and bottled in the same year.
So he carries on the flavor of the year.
We also filled the bottles with oak barrel chips for maturation. The mead matures - just like in the barrel - only that the barrel is practically IM mead. The special thing about it is that you can now decide for yourself when you end the barrel aging.
